Now that it's cold outside, how would you like a bowl of hot soup? This soup is so easy to make in the crockpot and will be ready by dinner time.
I would love to share with you the recipe for this healthy and delicious soup, it's become a family favorite in my house.
CROCK POT LENTIL SOUP WITH KALE
1 - 16 oz. package Goya Red Lentils - rinsed with water
1 chicken bouillon cube
4 cups kale - chopped
2 red potatoes - peeled & chopped
1 small onion - chopped
2 teaspoons minced garlic
1 teaspoon olive oil
1 - 8 oz. can of tomato sauce
salt and pepper to taste
9 cups of water
Add everything to the crock pot and put the setting on HIGH for 6 hours. Done. Enjoy!

I love soup on cold days. Have never tried this one though. Sounds good!

Being Greek, I've been enjoying this soup for 48 years and besides being rich in iron, it is tasty and perfect for a cold winter's day! We make ours with carrots and celery and season with bay leaf, in addition to salt and pepper, instead of kale, and of course, lots of onion and garlic and tomato, like yours.

ReplyDeleteMmmm that soup does look good! I bought my husband a crock pot a year ago for Christmas (he makes supper in our house). We've been enjoying different dishes, but don't use it nearly enough. I'll have to keep this recipe to try as we all love soups here ... our favourite is butternut squash soup. Good Morning Julie, Do you know, I have never made a soup in a slow cooker... that is something I am going to have to remedy. I make a similar soup, but I add spinach, but I am going to ring the changes and try kale for a change.

Lentil soup is my favorite cold weather indulgence and I love the ingredients in your recipe. I substitute bouillon with turmeric or curry powder when I make mine and I love to add the chewy texture of mushrooms.
