Julie's Green Bean Potato Salad

How would you like an easy recipe to make Green Bean Potato Salad for your next dinner or BBQ?

Well, I have an easy recipe that tastes great and can be made fast.  I make this during the spring and summer months and my family loves this dish.




JULIE'S GREEN BEAN POTATO SALAD 

2 14.5 oz. cans string beans - drained
7 red potatoes - cut up small and microwaved
small amount of red onion - chopped
2 to 3 tablespoons red wine vinegar
2 to 3 tablespoons olive oil
salt and pepper to taste

Add cut up potatoes and put into a microwaveable bowl with one tablespoon of water.  Put the potatoes on potato setting in the microwave and cook until done.  Let potatoes cool.  Put in a large bowl 2 cans of drained string beans, potatoes, red onion, salt and pepper, vinegar, and olive oil.  Mix everything together.  Done.

  6. My gosh- I hadn't thought of this in years. I have never had it cold but my mother used to cook green beans and new baby potatoes together and then toss in butter, salt and pepper. That tasted SOOO good and I bet this does, too! Thanks for the recipe- xo Diana
