Summer Ranch Dressing Salad

Now that the weather is getting warmer and summer is approaching I love having a light salad on the side to any meal or BBQ.

Here is an easy salad recipe that my family and I enjoy and I'd love to share with you.




Summer Ranch Dressing Salad

Ingredients:

1 cucumber - peeled and cut up
1 large tomato - cut up
1 can chickpeas - rinsed
1/4 cup of red onion - cut up
3 tablespoons ranch dressing
salt and pepper to taste

Directions:

In a bowl add cucumber, tomato, chickpeas, red onion and mix all together.  Add salt and pepper and the ranch dressing and mix all together.

*  You can adjust this salad to any size that you like.

Done!

  5. This looks delicious. Sometimes I get tired of salads with lettuce, so this would be perfect. Wish it would warm up a little here. We're having stew tonight b/c it's still kind of chilly!
